Traditional Japanese Charcoal Grilled Yakitori
Binchō-tan (備長炭), also called white charcoal is a type of charcoal traditionally used in Japanese cooking. Binchotan burns cleanly with a high steady heat and the alkalised ashes are said to neutralise protein acids and other undesirable acidic products during cooking. Juices in foods are quickly sealed enhancing the natural flavours of the food.

Izakaya (居酒屋) is made up of three kanji characters with the meaning, in order, “stay-drink-place.” A spot to grab a drink, settle in, and get comfortable.
